Strawberry Oatmeal Chia Seed Pudding

This colorful chia bowl is packed with immune boosting ingredients and superfoods! With ingredients like chia seeds, oats, coconut milk, honey, and fresh strawberries, this breakfast is filled with nutrients and will leave you feeling refreshed and energized.

Ingredients
  

  • 1 tbsp and 1 tsp each chia seeds
  • 1/4 cup rolled oats substitute quick oats
  • 2 1/2 tsp shredded coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 cup canned coconut milk
  • 6 tbsp water
  • 2 tbsp almond milk
  • 2 tsp honey
  • 1/3 cup fresh strawberries chopped

Instructions
 

  • In a small bowl, whisk together all of the ingredients except for the strawberries until well incorporated.
  • Stir in the chopped strawberries and continue mixing for about a minute to prevent the chia seeds from clumping together.
  • Cover the bowl and place it in the fridge overnight.
  • Serve cold with your favorite toppings! I like to use coconut flakes, almonds, hemp seeds, almond milk, and extra strawberries.
