Ingredients

  • 1 cup pitted Medjool Dates
  • 1/4 cup walnuts
  • 1/2 tsp coconut sugar
  • 1 tbsp cashew butter
  • 1/2 tbsp lemon zest
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 5 tbsp shredded coconut *divided- save 2 tbsp for last step
  • 2 tbsp coconut flour

Instructions

  • Add the pitted dates and walnuts to a food processor and pulse until a sticky paste forms.
  • Add in the coconut sugar, cashew butter, lemon zest, cinnamon, vanilla, coconut flour and 3 tablespoons of the shredded coconut. Pulse until a rough dough forms. The dough should be sticky and will get firmer in the fridge.
  • Roll the energy bites into 1-inch balls and set them on parchment paper. The recipe makes for about 11 balls. Add 2 tablespoons of shredded coconut to a bowl and roll each energy bite in the shredded coconut to fully coat.
  • Place the coconut lemon energy bites on a plate or other container in the fridge for about 20 minutes.
  • Enjoy! These keep well in the fridge in a sealed container on in the freezer for up to a month:)
