These healthy, no-bake, coconut lemon bliss balls are packed with energizing ingredients, plenty of fiber, and are naturally sweetened! With hints of coconut and lemon and a touch of cinnamon, these energy bites are the perfect summer snack or dessert!

Instructions
Add the pitted dates and walnuts to a food processor and pulse until a sticky paste forms.
Add in the coconut sugar, cashew butter, lemon zest, cinnamon, vanilla, coconut flour and 3 tablespoons of the shredded coconut. Pulse until a rough dough forms. The dough should be sticky and will get firmer in the fridge.
Roll the energy bites into 1-inch balls and set them on parchment paper. The recipe makes for about 11 balls. Add 2 tablespoons of shredded coconut to a bowl and roll each energy bite in the shredded coconut to fully coat.
Place the coconut lemon energy bites on a plate or other container in the fridge for about 20 minutes.
Enjoy! These keep well in the fridge in a sealed container on in the freezer for up to a month:)
