Method
- Add the pitted dates to a food processor and blend until it starts to form clumps. Take the mixture out of the food processor and set it aside in a bowl.
- Add the walnuts, salt, vanilla, and spices to the food processor and pulse until it forms a smooth dough. Add back in the dates until it begins to clump and combine together.
- Add in the coconut flour in a few batches until just combined.
- Scoop and roll about 2 tbsp of mixture into a ball and roll each one in a bowl of shredded coconut flakes to coat.
- Place them in the fridge to chill for about 10 minutes.

These energy bites keep in the fridge for about a week and in the freezer for 1 month!
