Carrot Cake Coconut Energy Bites

If you love carrot cake as much as I do you'll love these super easy, no bake, delicious energy bites! They're fudgy, naturally sweet, and make for the perfect quick afternoon pick me up! Who wants to try?!!

Ingredients
  

  • 3/4 cup peeled and shredded carrots about 2 carrots
  • 3/4 cup packed Medjool dates
  • 1 3/4 cup raw walnuts
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 6 tbsp coconut flour or almond flour
  • 1/2 cup dessicated coconut flakes

Instructions
 

  • Add the pitted dates to a food processor and blend until it starts to form clumps. Take the mixture out of the food processor and set it aside in a bowl.
  • Add the walnuts, salt, vanilla, and spices to the food processor and pulse until it forms a smooth dough. Add back in the dates until it begins to clump and combine together.
  • Add in the coconut flour in a few batches until just combined.
  • Scoop and roll about 2 tbsp of mixture into a ball and roll each one in a bowl of shredded coconut flakes to coat.
  • Place them in the fridge to chill for about 10 minutes.

Notes

These energy bites keep in the fridge for about a week and in the freezer for 1 month!
