Beet Hummus with Whipped Goat Cheese Swirl and Homemade Pita Chips

This vibrant and garlicky beet hummus is a show-stopper! With a gorgeous pink color and bold citrusy flavors, this is a dish you'll want to showcase at your next dinner party. Pair it with my whipped goat cheese and chive spread with homemade pita! Comes together in less than 25 minutes.

Ingredients
  

Beet Hummus

  • 1 can chickpeas drained and rinsed
  • 2 large cooked and peeled fresh beets chopped in half
  • 2 tbsp tahini
  • 2 tbsp extra virgin olive oil
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Dijon mustard
  • 1/2 tbsp apple cider vinegar
  • 1 1/2 tbsp fresh lemon juice
  • 2 tsp fresh garlic (~2-3 cloves) minced

Whipped Goat Cheese Spread

  • 4 oz goat cheese
  • 1 tbsp extra virgin olive oil
  • 1-2 sprigs fresh thyme (~1 tbsp)
  • 1 clove fresh garlic
  • pinch of sea salt
  • 1/2 bunch of chives (~1 tbsp) diced finely

Pita Chips

  • 1 package whole wheat pita bread
  • 1 tbsp extra virgin olive oil
  • pinch of salt
  • pinch of pepper
  • 2 tsp Italian seasoning

Instructions
 

Beet Hummus

  • Preheat the oven for the pita bread at 400 degrees F.
  • Add the chickpeas and cooked beets to a food processor and process until smooth. Add in the rest of the ingredients to the food processor and pulse until smooth.
  • Add the hummus to a serving bowl and using the back of a spoon create a swirl indentation in the hummus where the whipped goat cheese will go. Set aside.

Pita Chips

  • Cut each pita bread into 8 triangles and add them to a baking sheet.
  • Add in the olive oil, salt, pepper, and Italian seasoning and toss with a pair of tongs to combine.
  • Spread the pita triangles evenly on the baking sheet and bake for 10 minutes or until browned and crispy. In the meantime, make the goat cheese spread.

Whipped Goat Cheese

  • To a separate food processor, add the goat cheese and olive oil and pulse until combined. Add in the thyme, garlic, and salt and pulse until smooth.
  • Mix in the minced chives using a rubber spatula.
  • Spoon the whipped goat cheese into the pocket indentations of the beet hummus. Top with a drizzle of olive oil and extra minced chives.
