Beet Hummus
- Preheat the oven for the pita bread at 400 degrees F.
- Add the chickpeas and cooked beets to a food processor and process until smooth. Add in the rest of the ingredients to the food processor and pulse until smooth.
- Add the hummus to a serving bowl and using the back of a spoon create a swirl indentation in the hummus where the whipped goat cheese will go. Set aside.
Pita Chips
- Cut each pita bread into 8 triangles and add them to a baking sheet.
- Add in the olive oil, salt, pepper, and Italian seasoning and toss with a pair of tongs to combine.
- Spread the pita triangles evenly on the baking sheet and bake for 10 minutes or until browned and crispy. In the meantime, make the goat cheese spread.
Whipped Goat Cheese
- To a separate food processor, add the goat cheese and olive oil and pulse until combined. Add in the thyme, garlic, and salt and pulse until smooth.
- Mix in the minced chives using a rubber spatula.
- Spoon the whipped goat cheese into the pocket indentations of the beet hummus. Top with a drizzle of olive oil and extra minced chives.
