Banana Oatmeal Everything Cookies

These thick, chewy, and comforting cookies are vegan and refined sugar free! With hints of cinnamon and banana, these cookies will have your whole house smelling heavenly.

Ingredients
  

  • 1 ripe banana
  • 1/3 cup olive oil
  • 1/3 cup cane sugar
  • 1/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 3/4 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 2 cups quick cooking or rolled oats
  • 1/2 cup chopped walnuts
  • 1/4 cup Craisins
  • 1/4 cup pumpkin seeds

Instructions
 

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • In a large bowl, mash bananas and whisk in the olive oil, sugars, and vanilla extract.
  • Add the flour, cinnamon, baking soda, and salt to the same bowl and mix until just combined. Fold in the oats, walnuts, craisins, and pumpkin seeds.
  • Roll about 1-2 tbsp of dough into balls (should be sticky) and place them onto your prepared baking sheet 2 inches apart pressing down slightly on each one to flatten.
  • Bake for 10-12 minutes or until golden brown, allow them to cool for 2 minutes, and transfer them to a baking rack to finish cooling.

Notes

Mix and Match the add-ins with what you've got! These would be delicious with dark chocolate chips, raisins, or any seed you have on hand.
