Method
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- In a large bowl, mash bananas and whisk in the olive oil, sugars, and vanilla extract.
- Add the flour, cinnamon, baking soda, and salt to the same bowl and mix until just combined. Fold in the oats, walnuts, craisins, and pumpkin seeds.
- Roll about 1-2 tbsp of dough into balls (should be sticky) and place them onto your prepared baking sheet 2 inches apart pressing down slightly on each one to flatten.
- Bake for 10-12 minutes or until golden brown, allow them to cool for 2 minutes, and transfer them to a baking rack to finish cooling.
