I can’t get enough of this strawberry oatmeal chia pudding on these hot summer days. There’s nothing like the taste of fresh, ripe strawberries and when you add them to a refreshing breakfast bowl like this one, your mornings are bound to be bright and sunny.
I used to avoid chia puddings because of the texture, and if you also find yourself hesitant to try a hand out at making it, let me tell you, it took me quite a few tries to get a good ratio of solid to liquid for the perfect smooth and silky consistency. I think you’re gonna love this one.
This recipe for chia pudding includes rolled oats for extra fiber and texture, as well as plenty of nourishing ingredients for that boost of energy and focus we need to start our days off on the right note.

What You Need
- Chia Seeds
- Rolled Oats
- Shredded Coconut
- Cinnamon
- Salt
- Vanilla Extract
- Coconut Milk
- Water
- Almond Milk
- Honey
- Strawberries
The BEST part is that this recipe takes just under 20 minutes to make and you can set it in the fridge overnight to work its magic and wake up to a healthy and delicious breakfast!
Who’s in?!
All you have to do is combine all of the ingredients except for the strawberries in a small bowl. Stir in the chopped strawberries and continue mixing for a few minutes to prevent the chia seeds from clumping together.
Cover the bowl and place it in the fridge overnight. Enjoy with your favorite toppings! I used shredded coconut, almonds, hemp seeds, almond milk, and more fresh strawberries!

Strawberry Oatmeal Chia Seed Pudding
Ingredients
- 1 tbsp and 1 tsp each chia seeds
- 1/4 cup rolled oats substitute quick oats
- 2 1/2 tsp shredded coconut
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1/4 cup canned coconut milk
- 6 tbsp water
- 2 tbsp almond milk
- 2 tsp honey
- 1/3 cup fresh strawberries chopped
Instructions
- In a small bowl, whisk together all of the ingredients except for the strawberries until well incorporated.
- Stir in the chopped strawberries and continue mixing for about a minute to prevent the chia seeds from clumping together.
- Cover the bowl and place it in the fridge overnight.
- Serve cold with your favorite toppings! I like to use coconut flakes, almonds, hemp seeds, almond milk, and extra strawberries.
