These healthy, no-bake, coconut lemon bliss balls are packed with energizing ingredients, plenty of fiber, and are naturally sweetened! With hints of coconut and lemon and a touch of cinnamon, these energy bites are the perfect summer snack or dessert!
My Favorite Summer Snack
I’ve got a big sweet tooth, so when it comes to snacking I like to have a few healthy sweet treats on hand that will keep me satisfied and full. I LOVE making energy bites because they are super simple to customize with what you’ve got on hand and they don’t require any baking——perfect for summer!
I’m a big fan of lemon and coconut and these energy bites combine the two into a bite-sized snack that has all of my favorite ingredients. They are light, slightly tangy, and taste just like a slice of lemon cake, but made healthier.
What Makes it Healthy?
When looking for a healthy snack, I try and make sure it has enough fiber and protein to leave me satisfied until my next meal. When you reach for a rice cake or a few crackers as your snack, you might notice that you feel hungry less than an hour later and not very energized. This is because these snacks lack protein, fiber, and fat which are all digested at a slower rate and provide you with longer-lasting energy. Oftentimes, adding just a little bit of nut butter or some other source of protein or fat is enough to keep you satisfied enough that you won’t be running back to the pantry soon after.
These energy bites have the perfect combination of fiber, protein, and fat, giving you that long-lasting boost of energy we all need in the middle of the day.
Soft and plump Medjool dates add plenty of fiber while the cashew butter and walnuts provide the healthy fat and protein to power you through your day. I used my recipe for homemade coconut vanilla cashew butter in this recipe which I am linking here! Store bought cashew butter would work as well. I like to have two of these coconut lemon energy bites with tea in the afternoon or as a great after-dinner treat!

Most of my recipes for energy bites start out with a base of walnuts and dates and then I look for fun flavor combinations and spices to use! If you don’t have everything on hand for this recipe, try substituting the walnuts for another nut as well as your choice of nut butter! Let me know what you try:)
How to Make Energy Bites
All you need to make these coconut lemon energy bites is a food processor.
The first step to making these energy bites is to combine the pitted dates and walnuts into a food processor, pulsing until a sticky and uniform paste forms.
Next, add in the rest of your ingredients, leaving out two of the five tablespoons of shredded coconut for rolling the energy bites into. If the dough is too sticky, feel free to add in a little more coconut flour to get the desired consistency you want. I’ve found that two tablespoons of coconut flour does the trick!
Pulse all of the ingredients together until a rough dough forms. The dough should be slightly sticky. Don’t worry if it doesn’t seem firm enough because after you refrigerate them, they will hold their shape well.
Roll the dough into one inch balls and place them on parchment paper. Add two tablespoons of the shredded coconut to a bowl and roll each ball in the coconut shreds, coating them entirely. Place the energy bites on a plate or other container and refrigerate them for about 20 minutes before eating.
These keep well covered in the fridge for one week or in the freezer for up to a month!

Healthy Coconut Lemon Energy Bites
Ingredients
- 1 cup pitted Medjool Dates
- 1/4 cup walnuts
- 1/2 tsp coconut sugar
- 1 tbsp cashew butter
- 1/2 tbsp lemon zest
- 1/4 tsp cinnamon
- 1/2 tsp vanilla extract
- 5 tbsp shredded coconut *divided- save 2 tbsp for last step
- 2 tbsp coconut flour
Instructions
- Add the pitted dates and walnuts to a food processor and pulse until a sticky paste forms.
- Add in the coconut sugar, cashew butter, lemon zest, cinnamon, vanilla, coconut flour and 3 tablespoons of the shredded coconut. Pulse until a rough dough forms. The dough should be sticky and will get firmer in the fridge.
- Roll the energy bites into 1-inch balls and set them on parchment paper. The recipe makes for about 11 balls. Add 2 tablespoons of shredded coconut to a bowl and roll each energy bite in the shredded coconut to fully coat.
- Place the coconut lemon energy bites on a plate or other container in the fridge for about 20 minutes.
- Enjoy! These keep well in the fridge in a sealed container on in the freezer for up to a month:)
