These protein-packed vegetarian breakfast tacos are a great way to start your day off right! Made with black beans, scrambled eggs, spinach, and a spicy corn salsa, these tacos are my new breakfast obsession!
I don’t know about you but 90% of the time I wake up craving something sweet for breakfast. My staple breakfast usually involves some version of toast with nut butter, bananas, or some other seasonal fruit. This combo might never get old, but today I felt like switching things up and experimenting with some bold Mexican flavors to add a little kick and spice to my morning!
Little did I know, a few simple ingredients and just 10 minutes of my time would result in this irresistible, protein-packed breakfast combo brimming with bold flavors.
All I can say is WOW. Nut butter toast, step aside.
We’ve got breakfast tacos coming in hot! They’re vegetarian, contain plenty of fiber and lots of protein to keep you fueled all morning long.
The Most Important Meal of the Day
I always try to incorporate carbs, protein, and healthy fats into all of my meals. Breakfast is no exception. We have all heard that breakfast is the most important meal of the day, but how many of us actually have the time in the morning to sit down and eat a well-balanced meal complete with all of the macronutrients our bodies need after fasting all night?
What we know from research studies on the importance of breakfast that it is not so much WHEN we are eating our first meal of the day but rather WHAT we are eating. After a full night of fasting, your body relies on the food you eat in the morning to jump-start your metabolism and give your gut the nourishment it needs to maintain proper digestion throughout the day.
Choosing foods higher in fiber, whole grains, protein, and healthy fats at breakfast can help stabilize your blood sugar, improve your metabolic function, and feed your healthy gut bacteria, which contribute to a healthy microflora and more fluid digestion.
Eating a healthy and well-balanced breakfast doesn’t have to be a hassle.
Healthy Breakfast Options
Here are some of my favorite healthy breakfast combos that are sure to help you start your day off on the right note!
- Two pieces of whole grain or sprouted bread toasted and topped with a tablespoon of nut butter, half a banana, and cinnamon!
- More amazing toast combos!
- Peanut butter and mashed blueberries.
- Almond butter, strawberries, and dark chocolate chips.
- Peanut butter, sautéd apples, cinnamon.
- More amazing toast combos!
- Half of an everything bagel with cream cheese and smoked salmon.
- Half a cup of greek yogurt with 1 tbsp nut butter, berries, and a drizzle of honey.
- Half a cup of oatmeal made with unsweetened almond milk, cinnamon, and topped with 1 tbsp of nut butter and sliced banana.
- Two scrambled eggs with a slice of whole grain toast and fruit.
- Lastly… This incredible vegetarian breakfast taco!!!
Building a Healthy Breakfast Taco
This breakfast taco is the perfect simple and nutritious meal to start your day with. Whole grain tortillas add the fiber to keep your digestion fluid, while the eggs and black beans give you plenty of protein. The spinach and kale give you a boost of vitamins and minerals and are cooked in some olive oil for a source of healthy fats! Who’s in?!
All you need is 5 ingredients, a few key spices (paprika, chili powder, cumin) and just 10 minutes of your time to make this AMAZING Mexican inspired breakfast creation!

Chipotle Black Bean Breakfast Tacos!
Ingredients
- 1 large whole wheat tortilla
- 1/2 cup drained and rinsed black beans (patted dry)
- 1/4 tsp chili powder
- 1/4 tsp paprika
- 1/4 tsp cumin
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 free range eggs, scrambled
- 1/2 cup spinach or kale
- 1/2 tbsp olive oil
Instructions
- In a bowl, toss the drained black beans with all of your spices.
- Heat 1/2 tbsp olive oil over medium heat and add the black beans, sautéing them for 5 minutes.
- Add the spinach or kale and cook for 2 more minutes. Set this mixture aside in a bowl.
- In a small bowl, whisk 2 eggs together with a sprinkle of salt and pepper. Heat that same pan that had the black beans over medium low heat and add the scrambled eggs, slowly swirling your spatula around the edges and folding the eggs until they are only slightly runny. Transfer them to a bowl.
- Warm up the flour tortilla in the pan. On a plate, assemble the black bean, spinach mixture and scrambled eggs on the tortilla. Top with corn salsa, avocado, feta, or tomatoes!
