Carrot Cake Coconut Energy Bites

These delicious no-bake healthy energy bites taste just like a slice of carrot cake without all of the fuss! They are naturally sweetened, decadent, and make for the perfect healthy snack.

9 ingredients and 30 minutes only?! YES PLEASE.

It’s May which means time to bake some of my favorite spring time desserts! I’m talking lemon bars, berry cobblers, strawberry shortcakes, and of course these no-bake, delicious carrot cake snowballs! I love making snack bites to have throughout the week when I hit that 3pm slump and need a little pick-me-up! Anyone relate?

Carrot cake is my absolute favorite kind of cake EVER so when I was thinking of new flavor combinations to make my energy bites I thought why not try and replicate the flavor and texture of a carrot cake without all the baking and hassle? Well, I am here to tell you that these snowball snack bites are just the perfect treat for any type of occasion. They are fudgy, naturally sweetened, and rolled in coconut shreds for the most delicious bite. Can’t wait to have these with my afternoon tea!

Key Ingredients

All you need is a couple of key ingredients to make tons of variations of these snack bites! Some of my favorites are peanut butter, vanilla cake, cacao and coconut, pumpkin, and lemon!

Key Ingredients

  • Dates and Walnuts
    • This combination yields a sticky paste that forms well into a ball. Combine this with a few tablespoons of flour (here we use coconut or almond flour) and there you have the base for your energy bites!
      • Walnuts provide a healthy source of fat to keep you feeling fuller for longer so that you aren’t hangry before dinner-time!
      • Dates are the natural sweetener and binding agent!
  • Carrots
    • Adding some carrots gives these energy bites a nutritious boost! Packed with Beta Carotene, a precursor to Vitamin A, carrots make the perfect addition to these snack bites, not to mention the incredible taste and texture it gives them!
  • Cinnamon and Nutmeg
    • These cozy spices give these bites a kick of flavor, giving you that quintessential taste of your favorite carrot cake.
      • These spices boast powerful antioxidants and help to stabilize blood sugar and reduce inflammation.
  • Coconut or almond flour
    • You need about 4-6 tbsp of either flour to help the dough form. I used coconut flour to give it an extra bit of coconut flavor but almond flour works just as well!

How to make and store

All you need is a food processor and 9 ingredients to make these snack bites! If you’re looking for minimal cleanup, this recipe is for you!

HOW TO MAKE

Start by adding the pitted dates to the food processor. This will form a sticky paste that will make combining everything a little bit easier.

Next, add the walnuts, salt, vanilla, and spices to the food processor until a smooth dough starts to form. Add back in the dates until everything starts to clump together.

Add in the coconut flour in batches until just combined (be careful not to overmix!)

Scoop and roll about 2 tbsp of dough into balls. Roll them in a bowl of shredded coconut until they look like little snowballs! Chill in the fridge for 10 minutes to let them firm up 🙂

HOW TO STORE

These keep well in the refrigerator for up to 1 week or you can freeze them and make them last 1 month! Make a whole batch of these to freeze and you know you’ll have a healthy treat waiting for you in no time.

Carrot Cake Coconut Energy Bites

If you love carrot cake as much as I do you'll love these super easy, no bake, delicious energy bites! They're fudgy, naturally sweet, and make for the perfect quick afternoon pick me up! Who wants to try?!!

Equipment

  • food processor

Ingredients

  • 3/4 cup peeled and shredded carrots about 2 carrots
  • 3/4 cup packed Medjool dates
  • 1 3/4 cup raw walnuts
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 6 tbsp coconut flour or almond flour
  • 1/2 cup dessicated coconut flakes

Instructions

  • Add the pitted dates to a food processor and blend until it starts to form clumps. Take the mixture out of the food processor and set it aside in a bowl.
  • Add the walnuts, salt, vanilla, and spices to the food processor and pulse until it forms a smooth dough. Add back in the dates until it begins to clump and combine together.
  • Add in the coconut flour in a few batches until just combined.
  • Scoop and roll about 2 tbsp of mixture into a ball and roll each one in a bowl of shredded coconut flakes to coat.
  • Place them in the fridge to chill for about 10 minutes.

Notes

These energy bites keep in the fridge for about a week and in the freezer for 1 month!
