Beet Hummus with Whipped Goat Cheese Swirl

This vibrant and garlicky beet hummus is a show-stopper! With a gorgeous pink color and bold citrusy flavors, this is a dish you’ll want to showcase at your next dinner party. Pair it with my whipped goat cheese and chive spread with homemade pita! Comes together in less than 25 minutes.

Can’t BEET this!

This hummus recipe got a little upgrade with the addition of vibrant pink beets to add flavor, color, and a boost of nutrition in this dish. I mean, how gorgeous is this color? For this recipe, I used 2 pre-cooked beets to make the process simpler, but feel free to boil or roast fresh beets and peel them before adding them to the food processor. Beets are one of my favorite vegetables because they are so versatile! You can throw them in a bright salad, add them to a brownie recipe, make a homemade dye for your icing, or use them for dips and spreads like this one 🙂

Beet Nutrition

Beets are a good source of dietary nitrates. These nitrates are bio-converted to nitric oxide, which is a powerful vasodilator known to have cardio-protective properties.

Beets are also an excellent source of folate, potassium, and magnesium. They are also rich in vitamins A, C, and K.

What’s more, this vegetable is high in betalains, a group of antioxidants that help fight free radicals in the body and prevent LDL oxidation. That’s a lot of beet science, but the key point is that beets pack in a ton of health benefits, which is why we should be including them as part of a diverse diet!

Bold Flavors and Textures

Traditional hummus contains chickpeas, lemon juice, garlic, olive oil, and tahini as its main ingredients. In this recipe we add beets to give it a vibrant color and a boost of nutrition, in addition to using dijon mustard and apple cider vinegar for a little tangy pop to balance the soft and mild flavor of the beets and chickpeas.

I am pairing this beet hummus with a smooth and creamy goat cheese swirl to intensify the flavor. All that’s left is to make some homemade crispy pita bread that’s gonna add that crunchy texture to this irresistible appetizer.

A Healthy Appetizer

One of my favorite things to do when experimenting in the kitchen is finding ways to add more nutrition along with flavor in the dishes I create. This recipe is an excellent appetizer or snack because it is packed with fiber from the chickpeas and beets in addition to the whole grains we are getting from the whole wheat pita bread!

Fiber is a key component for healthy digestion and serves to keep us full between meals. Another key player when it comes to feeling satiated after meals is fat! The olive oil and tahini in this dish provide plenty of unsaturated fats that are heart-healthy and anti-inflammatory.

Looking to add some more plant-based protein to your diet? You might want to try out this recipe. Chickpeas are an excellent source of plant-based protein to include in your diet. They are especially tasty when turned into garlicky dips such as this one!

Goat Cheese Chive Swirl

  • 4 oz goat cheese
  • 1 clove fresh garlic
  • 1 tbsp extra virgin olive oil 
  • 1-2 sprigs fresh thyme, leaves only (about 1 tbsp)
  • Pinch sea salt
  • ½ bunch chives, diced finely (about 1 tbsp)

All you have to do to make this goat cheese and chive swirl is throw everything in a food processor and pulse until smooth! If you want the chives to stand out, you can always fold them into the goat cheese dip at the end. This goat cheese and chive swirl would go wonderfully on a crostini or sandwich spread as well!

Homemade Pita!

Have you ever made homemade pita bread? It might sound complicated, but in reality it’s super simple and all you need are these 4 ingredients.

  • 1 package of whole wheat pita bread
  • 1 tbsp extra virgin olive oil 
  • Pinch of salt and pepper
  • 2 tsp Italian seasoning

To make your homemade pita bread, start by preheating the oven to 400 degrees F. Cut each pita bread into 8 triangles and add them to a baking sheet. Drizzle in the olive oil and add the salt, pepper, and Italian seasoning. Toss with a pair of tongs to combine.

Spread the pita triangles evenly on the baking sheet and bake for 10-12 minutes or until browned and crispy!

Putting it all together

Whether you are serving this hummus at a dinner party or eating it as a casual snack, this is a dish that will look beautiful no matter how you present it. My favorite way to make hummus look extra fancy is to create an indentation or swirl in the hummus. In this well I created in the hummus, I added the whipped goat cheese swirl followed by a generous drizzle of olive oil and extra fresh chives.

Serve the warm and crispy pita on the side and dig in!

Ingredients

Beet Hummus

  • 1 can chickpeas drained and rinsed
  • 2 large cooked and peeled fresh beets chopped in half
  • 2 tbsp tahini
  • 2 tbsp extra virgin olive oil
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Dijon mustard
  • 1/2 tbsp apple cider vinegar
  • 1 1/2 tbsp fresh lemon juice
  • 2 tsp fresh garlic (~2-3 cloves) minced

Whipped Goat Cheese Spread

  • 4 oz goat cheese
  • 1 tbsp extra virgin olive oil
  • 1-2 sprigs fresh thyme (~1 tbsp)
  • 1 clove fresh garlic
  • pinch of sea salt
  • 1/2 bunch of chives (~1 tbsp) diced finely

Pita Chips

  • 1 package whole wheat pita bread
  • 1 tbsp extra virgin olive oil
  • pinch of salt
  • pinch of pepper
  • 2 tsp Italian seasoning

Instructions

Beet Hummus

  • Preheat the oven for the pita bread at 400 degrees F.
  • Add the chickpeas and cooked beets to a food processor and process until smooth. Add in the rest of the ingredients to the food processor and pulse until smooth.
  • Add the hummus to a serving bowl and using the back of a spoon create a swirl indentation in the hummus where the whipped goat cheese will go. Set aside.

Pita Chips

  • Cut each pita bread into 8 triangles and add them to a baking sheet.
  • Add in the olive oil, salt, pepper, and Italian seasoning and toss with a pair of tongs to combine.
  • Spread the pita triangles evenly on the baking sheet and bake for 10 minutes or until browned and crispy. In the meantime, make the goat cheese spread.

Whipped Goat Cheese

  • To a separate food processor, add the goat cheese and olive oil and pulse until combined. Add in the thyme, garlic, and salt and pulse until smooth.
  • Mix in the minced chives using a rubber spatula.
  • Spoon the whipped goat cheese into the pocket indentations of the beet hummus. Top with a drizzle of olive oil and extra minced chives.
