Banana Oatmeal Everything Cookies

These cookies are thick, crispy on the outside and chewy on the inside with hints of warm banana and cinnamon… I just can’t get enough!

Oatmeal raisin cookies are a staple in my house and this time around I decided to switch things up a bit with these oatmeal banana cookies studded with craisins and pumpkin seeds for a boost of nutrients.

I’ve discovered that there is nothing better than having your whole house smell like banana bread and these cookies do just that. With all of the down time I’ve had at being stuck at home during this pandemic, baking has been on the top of my list. If you’re like me, cookies are on continuous rotation at my house and when my sweet tooth hits I like to have some healthy sweet treats I can always rely on.

These banana oatmeal everything cookies are healthy, vegan, and naturally sweetened, making them the perfect late night snack, breakfast, or on-the-go treat!

So what makes these healthy?

  • Whole Wheat Flour
    • Whole wheat flours are unrefined and are high in fiber, aiding in digestion and keeping you fuller for longer.
  • Coconut Sugar
    • Coconut sugar has a lower glycemic index which means that is takes longer for your blood sugar to spike after it enters your bloodstream.
  • Olive Oil
    • Olive oil is rich in healthy monounsaturated fats and is packed with nutrients
  • Pumpkin Seeds and Walnuts
    • Pumpkin seeds are high in antioxidants, magnesium, zinc, and fatty acids

What you need to make them

If you’re not already hooked, this recipe only requires 1 BOWL!

All you need is a bowl, a whisk, a cookie sheet, some parchment paper or nonstick spray, and your ingredients!

If you don’t have all of the ingredients you need to make these delicious cookies, don’t fret! This recipe is super versatile and would work great with other add-ins such as dark chocolate chips, raisins, or other seeds!

Banana Oatmeal Everything Cookies

These thick, chewy, and comforting cookies are vegan and refined sugar free! With hints of cinnamon and banana, these cookies will have your whole house smelling heavenly.

Servings: 24 cookies

Ingredients

  • 1 ripe banana
  • 1/3 cup olive oil
  • 1/3 cup cane sugar
  • 1/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 3/4 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 2 cups quick cooking or rolled oats
  • 1/2 cup chopped walnuts
  • 1/4 cup Craisins
  • 1/4 cup pumpkin seeds

Instructions

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • In a large bowl, mash bananas and whisk in the olive oil, sugars, and vanilla extract.
  • Add the flour, cinnamon, baking soda, and salt to the same bowl and mix until just combined. Fold in the oats, walnuts, craisins, and pumpkin seeds.
  • Roll about 1-2 tbsp of dough into balls (should be sticky) and place them onto your prepared baking sheet 2 inches apart pressing down slightly on each one to flatten.
  • Bake for 10-12 minutes or until golden brown, allow them to cool for 2 minutes, and transfer them to a baking rack to finish cooling.
  • Enjoy!

Notes

Mix and Match the add-ins with what you’ve got! These would be delicious with dark chocolate chips, raisins, or any seed you have on hand.

    Delicious! I added chocolate chips into mine to satisfy my chocolate cravings! Taste just like banana bread with an oatmeal twist! All ready in under a half hour!
