There’s something so nostalgic and warming about a warm slice of banana bread. It’s the cozy combination of cinnamon and sweet ripe bananas that make us come back to this delicious loaf time and time again.
I love banana bread so much that I wanted to see if I could make a granola that tasted just like it. This perfectly crunchy granola does just that. Made with cinnamon and a mashed ripe banana, this recipe will remind you of your favorite loaf of banana bread.
A Nourishing Breakfast
Granola can be a great option for a healthy breakfast! Nuts provide a source of healthy fats and protein while the oats add a boost of fiber to keep you full all morning long.
In my recipe, I used a combination of almonds and walnuts for variation and difference in texture. Feel free to experiment with other nuts you might have in your pantry! In addition, this recipe is naturally sweetened with banana and maple syrup for a subtle sweetness.
Almond butter gives this granola added flavor and helps to bind the ingredients together. Not to mention, this ingredient adds an extra boost of healthy fat and protein to fuel your morning.
My favorite way to serve this granola is with sliced bananas and a splash of almond milk . All I can say is I wish I had made a double batch because this granola was gone in less than a day at my house!
The Ingredients
In this recipe, you’ll find a list of simple and wholesome ingredients. You only need 8 ingredients to make this delicious banana bread granola at home!!
- Rolled oats
- Almonds
- Walnuts
- Maple Syrup
- Mashed Ripe Banana
- Almond Butter
- Cinnamon
- Salt
Making Granola from Scratch
For this recipe, you’ll need one large bowl and a large non-stick sheet pan. This granola took me about 10 minutes to prep before popping it in the oven to bake for 30-35 minutes. Let’s get started!
- Preheat the oven to 325 degrees F. If you have a non-stick pan, use as is. If not, line your pan with parchment paper.
- Add all of the ingredients to a large bowl and mix them together with a rubber spatula until combined. The mixture should be sticky.
- Spread the mixture in one thin layer on a non-stick sheet pan. You want the granola to be in one uniform layer but not too thick as you want the granola to get crunchy. Press the granola down with your fingers to spread it as thin as you can without leaving spaces.
- Bake for 30-35 minutes at 325 degrees F. Remove it from the oven and let the granola cool on the pan for at least 25 minutes to allow it to harden and cool. This is super important to getting crunchy granola clusters.
- Once cooled, use your hands to break the granola up into clusters.
- Enjoy!
