Fall is in the Air
This morning I decided to get out of my room (which I’ve been in for far too long studying for exams) and take a much needed nature walk. I hiked for an hour through the woods behind my house and took time to notice the beauty around me.
As I looked up in awe at the canopy of trees with vibrant reds, yellows, and oranges peeking through the luscious green forest, I realized how much we miss out on when we are buried in work and stuck inside our homes.
Nature is a healing reminder to pause and look up at the world around us. This is a time to not only notice the world around you and pay attention to the changing seasons, but also to take a moment and look within.
When we are swept away by to-do lists, reminders, and stressors, it is easy to stray from our own sense of calm and intuition. Too often we lose grasp of the things that ground us in the present moment and remind us that beauty is there for those who take the time to notice.
So my friends, if you have time today, take a moment to look within and ask yourself what you need to ground yourself back in the moment. Is it a walk in nature, coffee date with a friend… or maybe it’s taking the time to make my super tasty pumpkin muffins, because I can’t think of anything more grounding than that :))
Pumpkin Season
I’m sure you’ve seen a million recipes for all things pumpkin already, I know I have! But these pumpkin muffins are something else. They are light and fluffy, super moist, and have just the right amount of sweetness.
If you’ve got yourself a can of pumpkin puree at home, you’ve gotta give this recipe a try! I made them the other night for my roommates and they were gone in less than a day!
I love to bake with pumpkin and have been having fun coming up with recipe ideas for the blog! This recipe is healthier than a traditional pumpkin muffin but still hits the spot! If you want to make it even healthier, try swapping the white flour for whole wheat flour for some extra fiber!
A Perfect Pairing
As if these muffins weren’t perfect as is, I just HAD to add the best maple cream cheese frosting to take it to the next level. I figured no-one has ever had a frosted muffin they didn’t like, right?!
The warm spices in the muffin pair beautifully with this creamy and luscious maple cream cheese frosting, giving it a light and airy feel.
All you need are six ingredients for my healthier maple cream cheese frosting!
Maple Cream Cheese Frosting
- Lowfat cream cheese
- Nonfat greek yogurt
- Pure Maple Syrup
- Milk
- Vanilla Extract
- Pumpkin Spice
Slather the frosting all over these muffins and you’ve got yourself a treat! Hint: You might want to hide the muffins before they’re gone 😉
How to Make my Pumpkin Muffins
The process for making these pumpkin muffins is pretty simple.
First, preheat the oven to 350 degrees F and spray a 12 tin muffin pan with nonstick spray, or use muffin liners.
Add all your wet ingredients to a large bowl and whisk until smooth and combined.
Next, in a separate bowl, add all your dry ingredients and mix until combined.
Add the dry ingredients to the wet ingredients in 2 batches and fold the mixture together with a spatula until just combined. You want to make sure you don’t overmix, so that your muffins stay bouncy and light in texture.
Fill each muffin tin about 3/4 of the way with batter and sprinkle a dash of pumpkin spice over top! Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Let cool for 5 minutes in the muffin tins before taking them out to finish cooling. Let the muffins cool for at least 15 minutes before frosting!
Slather the frosting all over each muffin, sprinkle a tad more pumpkin spice, and dig in!

Pumpkin Muffins with Maple Cream Cheese Frosting
Ingredients
- 1 cup canned pure pumpkin puree
- 1/3 cup melted butter
- 2 eggs
- 1/2 cup maple syrup
- 2 tbsp nonfat greek yogurt
- 1 tsp vanilla extract
- 1 3/4 cup all purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp pumpkin spice
- 1/4 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp salt
Maple Cream Cheese Frosting
- 1/3 cup low-fat cream cheese
- 1/4 cup nonfat greek yogurt
- 1 tbsp oat milk substitute cow's milk or almond milk
- 1 tbsp maple syrup
- 1/2 tsp vanila extract
- 1/4 tsp pumpkin spice
Instructions
- Preheat the oven to 350 degrees F. Spray a 12 tin muffin pan with non-stick spray or line the muffin tins with muffin liners.
- In a large bowl whisk together the pumpkin puree, melted butter, eggs, maple syrup, greek yogurt, and vanilla extract until smooth.
- In another bowl, mix together the flour, baking soda, cinnamon, pumpkin spice, ginger, nutmeg and salt until combined.
- Add the dry ingredients into the wet ingredients in 2 batches, folding the dry ingredients into the wet with a spatula. Mix until just combined. Don't overmix!
- Fill each muffin tin about 3/4 of the way with batter. Sprinkle a dash of pumpkin spice on each one.
- Bake the muffins for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Once out of the oven, allow to cool in the muffin pan for 5 minutes before removing it from the pan to cool for at least 15 minutes before frosting.
Maple Cream Cheese Frosting
- While the muffins are baking, make the frosting. Cream together the cream cheese, greek yogurt, and oat milk in a standard mixer or with a spoon or spatula until smooth. Add in the maple syrup, vanilla, and pumpkin spice until smooth and combined.
- Frost each muffin with the maple cream cheese frosting, add a dash more of the pumpkin spice and enjoy! These muffins keep well in the fridge for up to 5 days.
