These decadent, healthy, and super simple parfaits have all the flavor and richness of a tiramisu but are made with 9 ingredients, and take only 25 minutes to make!! I mean WHAT?! I’m here for it.
Don’t get me wrong, I’m a BIG fan of traditional tiramisu, but making it is a time consuming process with many steps and ingredients along the way. In this recipe, I set out to create a layered parfait with all of the flavors I love in a tiramisu, but made in under 25 minutes!
This is a crowd-pleaser! And who doesn’t love a single serve, no-bake dessert, especially when it’s this tasty! No need to worry about who gets the last bite because with these layered tiramisu parfaits, there’s plenty to go around.
The Layers
This version on the classic tiramisu has multiple layers of crushed cookies, a mascarpone and greek yogurt blend, and a raspberry jam and dark chocolate center! All dusted with cinnamon and cacao powder for the finishing touch!
I seriously could eat this dessert every day. It is light, refreshing for summer, and perfect for feeding a crowd.
Healthy and Flavorful
A classic tiramisu is made with heavy cream, egg yolks, mascarpone, and sugar. I’m a firm believer that there is room for all foods and that life is to be enjoyed with a balanced and guilt-free approach so some days I might be feeling the real deal and that’s ok!
I wanted to create a little challenge for myself to create a healthier version that takes a fraction of the time to make! This recipe is just as satisfying, decadent, and beautiful as the classic but made lighter by the addition of greek yogurt for some extra creaminess and protein! The lemon zest and honey mixed with the creamy combo of greek yogurt and mascarpone is just delicious! not to mention the layers of raspberry jam and dark chocolate, and don’t forget the cookie crumbles!
The Ingredients
There are only 9!!
- Full fat greek yogurt
- Mascarpone cheese
- Lemon Zest
- Honey
- A cookie base and crumble (I chose a store-bought crunchy chocolate chip cookie)
- No sugar added raspberry marmalade (I used store-bought)
- Dark Chocolate Bar
- Cacao Powder
- Cinnamon
Time to Assemble
In a bowl, we mix the greek yogurt with mascarpone until smooth and creamy. Next we mix in the lemon zest and honey until incorporated.
For these parfaits, I used 6 small highball glasses that hold around 7-9 ounces of liquid. You can use any thin, cylindrical glass that you have around the house but the key is that it is narrow so you can get multiple layers!
I searched a similar glass on Amazon for you guys to get an idea of what I used. Linking these 8 oz highball glasses here.
Our bottom layer is made up of a base of crushed cookies pressed into the bottom of the glass, about a half inch thick. Make sure the cookie you are using is a crunchy cookie so that it crumbles and gives these parfaits a little texture.
Next we add our mascarpone/greek yogurt mix enough to fill another 1 and 1/2 inches of the glass. We follow this with a teaspoon of raspberry jam and melted dark chocolate.
We repeat the layers of cookie and mascarpone to finish these layers!
To give this dessert a chocolatey finish, I mixed 2 tbsp of cacao powder and 2 tbsp of cinnamon and with a spoon, dusted this mixture over top of the last layer of yogurt and mascarpone!
If you want to fancy it up even more, add a few more crumbles of cookie and you’ll be thanking me later. And that’s a wrap!
Once these layers are assembled you’ll be looking at a beautiful color scheme between the crushed cookies, creamy velvety yogurt and mascarpone, vibrant raspberry jam and dark chocolate!
Cool for Summer
These parfaits are put in the fridge for 30 minutes to set and should be served as soon as they’re out of the fridge.

Layered Tiramisu Parfaits
Equipment
- 6 narrow cylindrical glasses
Ingredients
- 1 1/4 cup full fat greek yogurt
- 1 1/4 cup mascarpone cheese
- zest of half a lemon
- 1/2 tbsp honey
- 8 store bought *crispy chocolate chip cookies crushed into small bits
- 4 tbsp raspberry jam no sugar added
- 3 tbsp melted dark chocolate
- 2 tbsp cinnamon
- 2 tbsp cacao powder
Instructions
- For these parfaits, I used 6 small highball glasses that hold around 7-9 ounces of liquid. You can use any thin, cylindrical glass that you have around the house but the key is that it is narrow so you can get multiple layers.
- In a bowl, we mix the greek yogurt with mascarpone until smooth and creamy. Next we mix in the lemon zest and honey until incorporated.
- For the bottom layer: in a small bowl, crush the cookies into small chunks and use about 1/3 of the cookie crumbles for the bottom layer, evenly distributing that amount into the 6 glasses, pressing into the bottom of the glass, about a half inch thick. Make sure the cookie you are using is a crunchy cookie so that it crumbles and gives these parfaits a little texture.
- Next we add half of our mascarpone/greek yogurt mix distributed between the 6 glasses, enough to fill another 1 and 1/2 inches of space in each glass.
- Next we layer 2 tsp of raspberry jam on top of the mascarpone layer in each glass.
- Melt about 1/2 of a bar of dark chocolate or enough to yield 3 tbsp of melted dark chocolate. Layer about 1 and 1/2 tsp of melted dark chocolate over the raspberry layers.
- Repeat the layers of cookie and mascarpone with the same amount as previously.
- Mix 2 tbsp of cacao powder and 2 tbsp of cinnamon and with a spoon or mesh strainer, dust this mixture over top of the last layer of yogurt and mascarpone. Sprinkle the final 1/3 of crushed cookies over top.
- Place in the fridge for 30 minutes. Enioy cold!
